The apex of GlenAllachie's core collection, and in Billy Walker's own words "the finest expression of our 21-year-old we've released to date." Batch 7 was initially matured in bourbon barrels before an extended secondary maturation in superior Pedro Ximénez and Oloroso sherry puncheons and hogsheads sourced from Spain. The result is vintage mahogany liquid with opulent layers of rich espresso, spiced plums, dark chocolate and forest fruits, presented at its natural cask strength of 51.9%, without added colouring or chill filtration.

Tasting Notes
- Colour: Opaque mahogany
- Nose: Baked ginger and mocha, followed by honeycomb, spiced orange and candied hazelnuts, with toasted cinnamon and cocoa
- Palate: Black cherries, mocha and poached red apples, followed by mānuka honey, crystallised ginger and muscovado sugar, with damson plums, raisin buttercream and treacle
