The Heart Cut #16 is a rare, characterful release from Fielden: a 100% English rye whisky built on a bold mash bill and finished in a seriously pedigreed sherry cask. It’s the kind of bottle that wins people over fast  big flavour, loads of texture, and a salty-sweet edge that keeps pulling you back in.

A huge 75% of the grain is heritage landrace rye, grown in sandy Oxfordshire soils (bringing a natural minerality and warmth). The remaining 25% is floor-malted rye from Warminster Maltings, adding malty richness and body. The whisky is then finished for 2 years and 4 months in a 600-litre Solera Oloroso sherry cask, originally seasoned for 45 years in Sanlúcar de Barrameda  which explains the nutty depth and that almost Manzanilla-like saline thread.

Tasting notes

Nose: Salted caramel (caramel sauce with smoked sea salt), ice cream cone sweets and cinnamon waffles, plus tropical fruit and crushed nuts. Earthy spice follows, with a flicker of freshly sharpened pencil.

Palate: Spiced honey and red wine tannins, then rye spice, warming oak and toasted cereal. A savoury salinity runs through it (almost Manzanilla-like), with flashes of dried pineapple and clove.

Finish: Long, nutty and complex with lingering warmth  dark chocolate, candied ginger, and a coastal saline twang.
