Nine years in the making, and only 126 bottles to show for it. Distilled at Chivas Brothers' Dalmunach distillery in 2016 and bottled in 2026, this single cask release spent its final 17 months in a first-fill oloroso sherry quarter cask — and the results are exactly what that combination promises.
Quarter casks accelerate maturation through greater wood contact, and a first-fill oloroso brings generous fruit and spice without overwhelming the spirit. Here, Dalmunach's naturally clean, fruit-driven character has soaked up everything the sherry wood had to offer, resulting in a bottle that punches well above its age statement.

Tasting Notes
Nose: Lemon sponge, vanilla custard, toffee, hedgerow berries, and a warming lift of fresh ginger.
Palate: Vibrant and fruit-laden — fresh apples, pears, strawberries, raspberries, and redcurrants lead the way, with toffee, chocolate walnut, and gingerbread rounding out the mid-palate beautifully.
Finish: Long and fruity, with a developing citrus note that keeps things bright and lingering.
About Dalmunach
Opened in 2015 on the site of the old Imperial Distillery in Carron, Speyside, Dalmunach is one of Scotland's most modern distilleries — built by Chivas Brothers to the highest production standards. Despite being a relative newcomer, it has quickly earned a reputation for producing exceptionally clean, fruity spirit. Single cask independent releases remain rare, making cask 11131 a notably early opportunity to explore what Dalmunach is truly capable of.
