Cooper King Distillery, located in Sutton-on-the-Forest near York, is a pioneering force in sustainable spirits production. Founded by scientist Dr. Abbie Neilson and architect Chris Jaume, the distillery draws inspiration from their travels in Tasmania, where they were captivated by the burgeoning whisky industry. This journey led them to establish a self-built distillery powered entirely by green energy, emphasizing local ingredients and environmental responsibility.

Their commitment to sustainability is evident in their production of England's first net-zero energy whisky, a significant milestone in eco-friendly distilling. Additionally, for every bottle sold, they plant one square meter of native woodland in partnership with the Yorkshire Dales Millennium Trust.

Cooper King's approach combines traditional methods with modern techniques. They utilize a unique 900-litre copper pot still, custom-made in Tasmania, and source 100% Yorkshire barley, which is traditionally floor-malted in England’s oldest working maltings. Their spirits, including a distinctive dry gin infused with lemongrass and locally grown lavender, have garnered acclaim for their quality and flavor.
